Becki is the Food and Recipes Contributor for Pretty in the Peak. Mom to Ella (11) and Taylor (10), she stays busy as a Technical Recruiter by day and Cheer Mom by night and on the weekends. Becki and her husband Jim love to cook together in the kitchen and can very often be found grilling on the back deck and trying out a new beer or cocktail. They also have a dog named Bailey.
Growing up just outside of Buffalo, New York, Becki was surrounded by her large family that loved to get together, have a good time and eat delicious food. Her mother is a great cook and she has many fond memories of meals that she made for their family growing up. This is where her love for food and cooking started and she hopes her girls have the same fond memories when they have their own kitchens and families.
While much of Becki’s cooking is light and healthy she also believes in balance, so desserts and sweets will definitely make a showing on PITP. She also loves to experiment with foods from different countries. She tries to cook from scratch as often as possible and her recipes are usually quick and never fussy. She loves a good craft beer, Prosecco and Bourbon – all in moderation:-).
Hometown: Attica, New York
Favorite Food: Spaghetti and Meatballs – although it is really hard to just pick one.
Current Obsession: Essential Oils – I’m pretty sure they are the answer to all of life’s problems;-). My kids make fun of me whenever I talk about them but they secretly love them, too.
Beach or Mountains?: Mountains – although I love to go to the beach a few times a year, too
Fun Facts: I played ice hockey for six(?) years when I was a kid in a boys league. I met Jim at a hockey game (he still plays.) Our first date was a Sabres/Caps game (Sabres won) and our Wedding was on the final night of the Stanley Cup when Ray Borque finally won. I always joke that was the only time Jim cried at our wedding:-). These days I don’t watch a whole lot of hockey.
