Hi everyone – Becki here! When I was young I used to visit my Aunt, Uncle and cousins in Alabama and was completely smitten with the South. I loved my cousin’s southern drawl, all of the brick homes and of course the warm weather.
Fast forward about twenty some years (who’s counting?) and my little growing family decided to relocate our family from Upstate New York to Raleigh, North Carolina. We weren’t exactly sure where we wanted to settle but pretty quickly we knew Apex was the place we wanted to call home. It was a small town very much like the northern town I grew up in. The downtown was quaint with old brick buildings and storefronts adorned with awnings and big glass windows. I just loved this little town but I also loved the fact that one of the biggest technology hubs in the US was located about 15 minutes away. It was meant to be:-).
We have lived down south for 8 years now and one of the things that I have learned that I really love is southern food. Between biscuits, collard greens and barbecue, southern food just speaks to me and although I didn’t grow up here it gives me all of the same comfort of the food I grew up eating. Apex has no shortage of great places to eat and drink. I thought it would be fun to take you to a few of my favorite places in Apex for food and drink and share one of my favorite classic southern recipe – Pimento Cheese – yum!
Peak City Grill is kind of like the flagship restaurant of downtown Apex. There are lots of other places to eat that are very good, but I thought it would be fun to take you here for our first post because it really reminds me of what Apex is all about. Good southern food (like Pimento Cheese), craft beer, cocktails and atmosphere.

One of my favorite places to take my girls for a sweet treat (and some coffee for me) is Buttercream’s Bake Shop – also in downtown Apex. I always try something different when we go and I haven’t had one thing I didn’t LOVE. I have to say though, the carrot cake in the picture below might be one of my favorite things I have tried there. They also serve Larry’s Coffee which is is roasted right here in Raleigh! Love it.

I wanted to share a recipe of mine that really reminds me of Apex and the south so while I was noshing on the Southern Sampler at Peak City I realized I should share my Pimento Cheese recipe! They add green onions to theirs and it was delish so I will add them the next time I make Pimento Cheese. Enjoy!
- 2 cups shredded extra-sharp Cheddar cheese
- 8 ounces cream cheese, softened
- ½ cup mayonnaise
- ¼ teaspoon garlic powder
- ¼ teaspoon ground cayenne pepper
- ¼ teaspoon onion powder
- 1 teaspoon Worcestershire Sauce
- 1 jalapeno pepper, seeded and minced
- (optional - I didn't use this time, but I think it would be great with some jalapeno heat)
- 1 (4 ounce) jar diced pimento, drained
- salt and black pepper to taste
- Place the Cheddar cheese, cream cheese, mayonnaise, garlic powder, cayenne pepper, onion powder, minced jalapeno, and pimento into the large bowl of a mixer. Beat at medium speed, with paddle if possible, until thoroughly combined.
- Season to taste with salt and black pepper.
