I don’t know about you, but I’m starting to feel the rush of the holidays coming my way (don’t hate.) I know everyone, including me, is moaning at the Christmas decorations at the big box stores but I have to admit I’m starting to feel a little bit festive now that Halloween is over. I am including Thanksgiving in my definition of “the holidays” so it really isn’t too far off! I’m sure part of it is that I have decided to be proactive with my Christmas shopping so I’m starting to think about what needs to get done earlier this year. We are also having family here for Thanksgiving so that has me thinking about holiday food.
Part of my preparation includes a little bit of a pre-holiday diet……which doesn’t include any of this food, but it will allow me to eat some of it when the time comes!
This marinated cheese is such a great appetizer – I mean just look at it. Doesn’t it look so festive? I made it for a Halloween party and last year I took it to work for our holiday party, too. I love the marinade and the onions, parsley and pimento look so pretty drizzled over the cheese. I like to drain a bit of the marinade before serving and make sure you give this a good 24 hours marinate before serving. You do need to plan a head for this one but if you are in a crunch you can still serve it – the cheese just want be be as zippy.
You can really use any cheese you like for this. The recipe calls for Monterey Jack and Cheddar but sometimes I like to use Pepper Jack or Mozzarella would be really good, too. I like to make sure that the cream cheese is really cold as it makes for easier slicing. A bench scraper comes in really handy for slicing this, too.

One of the girls I work with brought a pineapple cheeseball to our holiday party a few times. I got the recipe from her but have no idea what I did with it. I am pretty sure this is a very similar recipe from High Heels and Grills. Such an easy one to put together and SOO GOOD! I love a good cheeseball:-).
My sister-in-law Holly makes these Prosciutto and Gruyere pinwheels at Christmas and they are the bomb. Also super easy but BIG on deliciousness.

- 1 (0.7-oz.) envelope Italian dressing mix
- 1/2 cup vegetable oil
- 1/4 cup white vinegar
- 2 tablespoons minced green onion
- 2 tablespoons water
- 1 1/2 teaspoons sugar
- 1 (8-oz.) block Monterey Jack cheese, chilled
- 1 (8-oz.) block Cheddar cheese, chilled
- 1 (8-oz.) package cream cheese, chilled
- 1 (4-oz.) jar chopped pimiento, drained
- Assorted crackers
- 1. Whisk together first 6 ingredients. Set aside.
- 2. Cut Monterey Jack cheese in half lengthwise. Cut each half crosswise into 1/4-inch-thick slices. Repeat with Cheddar cheese and cream cheese.
- 3. Arrange cheese in 4 rows in a shallow 2-qt. baking dish, alternating Monterey Jack cheese, Cheddar cheese, and cream cheese. Pour marinade over cheese. Cover and chill at least 8 hours.
- 4. Drain marinade; arrange cheese on a platter in rows. Top with pimiento, and serve with assorted crackers.
